DinnerStovetop30 minServes 4
Ingredients
- 1 lb sirloin steak, thinly sliced
- 8 oz mushrooms, sliced
- 1 onion, sliced
- 1 cup beef broth
- 3/4 cup sour cream
- 1 tbsp flour
- 12 oz egg noodles
- 2 tbsp butter
Amounts are scaled from the original 4 servings; cooking times may change for bigger batches.
Steps
- Cook the noodles and drain.
- Sear the beef in 1 tbsp butter over high heat 1-2 minutes per side; remove.
- Cook the onion and mushrooms in the rest of the butter 6 minutes, sprinkle in flour, then stir in broth and simmer 3 minutes.
- Lower the heat, stir in sour cream (don't boil) and return the beef to warm through. Serve over noodles.
Swaps
- Plain yogurt (Greek works best) can stand in for sour cream.
- Half-and-half or whole milk can replace cream; the sauce will be a little thinner, so simmer it a bit longer and do not boil hard.
- Water plus a bouillon cube or a spoon of soy sauce can replace broth.
Times are a guide; ovens and air fryers vary. Cook poultry to 165°F, ground meat to 160°F, and pork and fish to 145°F. Diet tags come from the ingredient list; check labels for allergens.
