Ingredients
- 8 oz noodles or spaghetti
- 1 lb chicken breast, sliced
- 2 cups frozen stir-fry vegetables
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tsp cornstarch
- 1 tbsp oil
Amounts are scaled from the original 4 servings; cooking times may change for bigger batches.
Steps
- Cook and drain the noodles.
- Stir-fry the chicken in oil until 165°F, 5-6 minutes.
- Add the vegetables and cook 4 minutes.
- Whisk soy sauce, honey, cornstarch and 2 tbsp water, add with the noodles and toss until glossy.
Swaps
- Tamari or coconut aminos work in place of soy sauce (tamari is usually gluten-free; check the label).
- Maple syrup or sugar can replace honey (maple keeps it vegan).
- Turkey works the same way as chicken; cook both to 165°F.
Times are a guide; ovens and air fryers vary. Cook poultry to 165°F, ground meat to 160°F, and pork and fish to 145°F. Diet tags come from the ingredient list; check labels for allergens.
