DinnerStovetop30 minServes 4
Ingredients
- 1 lb chicken thighs, cubed
- 1 cup orzo
- 3 cups chicken broth
- 1 lemon
- 3 cups spinach
- 1/3 cup parmesan
- 1 tbsp oil
Amounts are scaled from the original 4 servings; cooking times may change for bigger batches.
Steps
- Brown the chicken in oil 5 minutes.
- Add orzo and stir 1 minute, then the broth; simmer 10-12 minutes, stirring, until the orzo is tender and the chicken reaches 165°F.
- Stir in spinach, lemon juice and parmesan.
Swaps
- Water plus a bouillon cube or a spoon of soy sauce can replace broth.
- Lime juice or a small splash of vinegar can stand in for lemon.
- Kale, chard or frozen spinach (thawed and squeezed) all work instead of fresh spinach.
Times are a guide; ovens and air fryers vary. Cook poultry to 165°F, ground meat to 160°F, and pork and fish to 145°F. Diet tags come from the ingredient list; check labels for allergens.
