DinnerStovetop25 minServes 4
Ingredients
- 12 oz pasta
- 1 lb chicken breast, cubed
- 3 cloves garlic, minced
- 1 lemon
- 2 tbsp butter
- 1/2 cup parmesan
- 2 handfuls spinach
Amounts are scaled from the original 4 servings; cooking times may change for bigger batches.
Steps
- Cook the pasta; save 1 cup water and drain.
- Brown the chicken in butter over medium-high heat until 165°F, 6-7 minutes.
- Add garlic for 30 seconds, then the spinach until wilted.
- Add pasta, lemon zest and juice, parmesan and enough pasta water to make a light sauce.
Swaps
- Lime juice or a small splash of vinegar can stand in for lemon.
- Kale, chard or frozen spinach (thawed and squeezed) all work instead of fresh spinach.
- Turkey works the same way as chicken; cook both to 165°F.
Times are a guide; ovens and air fryers vary. Cook poultry to 165°F, ground meat to 160°F, and pork and fish to 145°F. Diet tags come from the ingredient list; check labels for allergens.
