Ingredients
- 1 lb ground turkey or beef
- 1/3 cup breadcrumbs
- 1 egg
- 1/4 cup parmesan
- 8 cups chicken broth
- 1 cup small pasta
- 4 cups spinach
Amounts are scaled from the original 6 servings; cooking times may change for bigger batches.
Steps
- Mix the meat, breadcrumbs, egg, parmesan and salt and roll into small 3/4-inch balls.
- Bring the broth to a simmer, drop in the meatballs and simmer 10 minutes.
- Add the pasta and cook 8 minutes until tender and the meatballs reach 165°F.
- Stir in the spinach until wilted.
Swaps
- Out of breadcrumbs? Crush crackers or toast and pulse stale bread, or use rolled oats.
- Water plus a bouillon cube or a spoon of soy sauce can replace broth.
- Kale, chard or frozen spinach (thawed and squeezed) all work instead of fresh spinach.
Times are a guide; ovens and air fryers vary. Cook poultry to 165°F, ground meat to 160°F, and pork and fish to 145°F. Diet tags come from the ingredient list; check labels for allergens.
